Best option currently is to stay on MacOS Mojave, if you haven't already upgraded. Looks like Codeweavers are working hard on a solution for their Crossover product (based on wine) to be able to run both 32 and 64 bit Windows apps in MacOS Catalina. https://www.codeweavers.com/about/blogs/ken/2019/1...

Did you ever get this working?

I'm running theWord under wine on MacOS High Sierra and copy/paste is working fine using ctrl+c in theWord and cmd+v in MacOS.
The graphics driver that wine is running in might make a difference. I'm using the native graphics. The other option is XQuartz.

After some more searching, I've found a solution.

Set the following key in the registry
HKEY_CURRENT_USER\Control Panel\Desktop\WheelScrollLines = 1

Then the scrolling works very well with the trackpad.
